What says comfort food like a fully loaded baked potato? We captured the creamy, carb-y comfort in a soup. Thick and savoury, our potato soup is loaded with garlic, onion and herbs. Garnish with baked potato must-haves: Sour cream and chives—and, if you’re anything like us, crispy, chopped bacon.

Directions:
1) In large pot, sauté 1 onion in ¼ C butter.
2) Add 7 C water, 4 medium cubed potatoes; boil, then simmer covered for 20 min, stirring regularly.
3) Add package contents, 2 ½-3 ½ C cream or milk, ½ C butter, 1 package cooked chopped bacon; simmer on low for 20-30 min, stirring regularly (watch it does not stick to pot). Add extra milk as needed. Season with salt and pepper.
Garnish with sour cream and cheese.

Simply omit the bacon
