A lightly creamy soup inspired by Thai cuisine, our coconut prawn soup is bursting with flavour and vegetables, like bok choy and bell pepper. Cook it with chicken or prawns, or go vegan-friendly with tofu. Garnish with fresh cilantro—and don’t forget a squeeze of lime!

350 g SERVINGS: 10-11 x 2 CUPS
Directions:
1) In large pot, heat 6 tbsp butter; sauté 1 large chopped onion, 4 cup bok choy, 1 1/2 cup diced bell pepper, 2 cup diced mushroom.
2) Add package contents, 8 cup water, 400 ml can coconut milk, 2 cup plain yogurt, juice of 1 lime, 4 tbsp brown sugar, boil then simmer covered for approx 70 min.
3) Add 3-5 cup shrimp or prawns, 1/4 c soy sauce, 2 tbsp peanut butter; simmer until prawns are cooked. Season with salt and pepper.
Garnish with sesame oil and cilantro.
Option: substitute cooked chicken or steak for seafood.
